For a richer flavor, try using melted coconut oil instead of vegetable oil. If you don't have fresh blueberries, frozen blueberries can be used. Do not thaw before using and gently fold into the batter. A sprinkle of turbinado sugar on top of the muffins before baking adds a delightful crunch. These muffins are best enjoyed within 2-3 days. Store in an airtight container at room temperature.
