Follow The Directions

In a saucepan, bring water and quinoa to a boil. (2 minutes)

Reduce heat to low, cover, and simmer until quinoa is tender and water is absorbed. (15-20 minutes)

Preheat oven to 375 degrees F (190 degrees C). Grease an 18-cup muffin tin or line with paper liners.

In a medium bowl, whisk together all-purpose flour, whole wheat flour, salt, cinnamon, baking powder, baking soda, cloves, nutmeg, allspice, ginger, and cayenne pepper.

In a large bowl, combine shredded squash, yogurt, brown sugar, raisins, walnuts, eggs, and vanilla extract. Mix well.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

Spoon batter into the prepared muffin cups, filling each about 2/3 full.

Bake in the preheated oven until a wooden skewer inserted into the center comes out clean. (25-30 minutes)

Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

For a richer flavor, toast the walnuts before chopping.
Feel free to experiment with different types of squash or nuts.
These muffins freeze well. Wrap individually in plastic wrap and store in a freezer bag for up to 2 months.
A sprinkle of turbinado sugar on top of the muffins before baking adds a lovely crunch and sweetness.
