In a large pot or Dutch oven, combine the chicken broth, rice, drained mushroom pieces, water, sliced green onions, and butter. (2 minutes)

Bring the mixture to a boil over medium-high heat, stirring occasionally. (5 minutes)

Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 20 minutes, or until the rice is tender and most of the liquid has been absorbed.

Remove the pot from the heat and let it stand, covered, for 5 minutes to allow the remaining liquid to be fully absorbed and the rice to fluff up. (5 minutes)

Fluff the rice with a fork before serving. Taste and adjust seasoning as needed.

For a richer flavor, sauté the sliced green onions in the butter for a minute or two before adding the other ingredients.
Try using fresh mushrooms for an even more intense mushroom flavor. Slice and sauté them before adding the rice and broth.
This rice is excellent served with grilled chicken, roasted vegetables, or as a base for a stir-fry.
