Follow The Directions

01

Step

First, prepare the sauerkraut: Place the sauerkraut in a colander. Using your hands, squeeze out as much excess liquid as possible. Chop the sauerkraut into smaller pieces. (5 minutes)

02

Step

In a large bowl, combine the prepared sauerkraut, chopped onion, grated apple, and grated carrots. (2 minutes)

03

Step

Add the canola oil and sugar to the bowl. Toss all ingredients together until well combined. (3 minutes)

04

Step

Season generously with caraway seeds, salt, and freshly ground black pepper. Adjust the seasonings to your liking. (2 minutes)

05

Step

Cover the bowl and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the salad to chill. (30 minutes)

For a sweeter salad, use a sweeter variety of apple, like Fuji or Gala. If you prefer a more tart flavor, use Granny Smith.
Adjust the amount of sugar according to the tartness of your sauerkraut and your personal preference.
Caraway seeds are essential for the traditional flavor profile, but feel free to experiment with other spices like juniper berries or a pinch of smoked paprika.
This salad is best served chilled. It can be stored in the refrigerator for up to 3 days.

The key is really squeezing out the sauerkraut. Otherwise, it gets too watery. Thanks for the tip!
