Step

In a blender, combine 1/2 cup chicken stock, tomatoes, onion, serrano chile, and garlic. Blend until completely smooth. (2 minutes)

Strain the tomato mixture through a fine-mesh sieve into a bowl. Discard the solids and reserve the strained sauce. (5 minutes)

Heat vegetable oil in a saucepan or Dutch oven over medium-low heat. Add the fideo pasta and cook, stirring constantly, until the pasta is lightly golden brown. Be careful not to burn it. (4 minutes)

Pour the reserved tomato sauce into the saucepan with the browned noodles. Add the parsley sprigs and the remaining chicken stock. Season with salt to taste. (1 minute)

Bring the soup to a boil, then reduce heat to low, cover, and simmer until the noodles are tender and have absorbed some of the broth, approximately 20 minutes. (20 minutes)

Remove from heat and discard parsley sprigs. Ladle into bowls and garnish generously with grated Cotija cheese before serving. (2 minutes)

For a richer flavor, use homemade chicken stock.
Adjust the amount of serrano pepper to your spice preference.
If you can't find Cotija cheese, substitute with Parmesan or crumbled feta.
For a heartier soup, add shredded cooked chicken or vegetables such as corn or zucchini during the last 10 minutes of cooking.
