In the bowl of a stand mixer fitted with a dough hook, combine 4 cups bread flour, warm beer, warm water, shortening, instant yeast, brown sugar, salt, garlic powder, and onion powder. Mix until just combined. (5 minutes)

With the mixer running on low, gradually add the remaining flour, a little at a time, until the dough pulls away from the sides of the bowl and forms a smooth, elastic ball. This should take about 2 minutes.

Lightly grease a large bowl with 1 teaspoon of olive oil. Place the dough in the bowl, turning to coat. Cover with a clean kitchen towel and let rise in a warm place until doubled in size. (1 hour)

Preheat oven to 450°F (232°C). Grease two pizza pans with the remaining 2 teaspoons of olive oil and dust generously with cornmeal.

Gently punch down the risen dough and divide it into two equal portions. Place each portion onto a prepared pizza pan. Cover and let rest for 5 minutes to relax the gluten.

Stretch each dough portion into a circle about 1 inch larger than the pizza pan. If the dough resists stretching and shrinks back, cover and let it rest for another 5 minutes before stretching again.

Arrange 8 string cheese sticks, end to end, around the outer edge of each pizza crust. Fold the overhanging dough over the cheese sticks, pinching and sealing the dough to create a stuffed crust. Ensure the seam is well-sealed to prevent cheese leakage during baking.

Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

For a crispier crust, place a pizza stone in the oven while it preheats.

If you don't have beer, you can substitute with warm water and a teaspoon of malt extract for a similar flavor profile.
