In a large pot or Dutch oven, heat olive oil over medium heat. Add diced red onion and cook, stirring occasionally, until softened and lightly caramelized, about 7-10 minutes.

Add the rinsed lentils to the pot. Pour in enough water to cover the lentils by 2-3 inches. Bring to a boil, then reduce heat to medium-low, maintaining a gentle simmer.

Stir in tomato paste, minced garlic, brown sugar, and smoked paprika. Ensure the tomato paste is fully incorporated into the liquid. Simmer gently for about 1 hour, or until the lentils are tender and have absorbed much of the liquid.

Stir in the chopped kale. Reduce heat to low, cover the pot, and cook until the kale is tender and wilted, about 10-15 minutes. Season generously with sea salt and freshly ground black pepper to taste. Adjust seasonings as needed.

Serve hot, garnished with a drizzle of olive oil and a sprinkle of fresh herbs, if desired.

For a richer flavor, consider using vegetable broth instead of water.
A squeeze of lemon juice at the end brightens the flavors.
This dish can be made ahead and reheated; the flavors meld beautifully over time.
Add a pinch of red pepper flakes for a touch of heat.
