Press down on sandwich with a spatula, and cook until golden brown, 2 to 4 minutes. Flip sandwich over, press down, and cook until browned, 2 to 4 minutes more.

For an extra layer of flavor, consider adding a thin spread of Dijon mustard or a sprinkle of garlic powder to the inside of the bagel.
Feel free to experiment with different cheese combinations! Gruyere, cheddar, or even a spicy pepper jack would be delicious.
To ensure even cooking, use a skillet that distributes heat well. A cast-iron skillet is ideal.
