Prepare rice mix according to package directions. (Approximately 15 minutes)

In a large pot, combine 1 1/2 cups prepared rice mix, cooked chicken, broth, onions, mushrooms, celery, parsley, salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

For a thicker soup, stir in half-and-half and cook 5 minutes more.

For an even richer flavor, use homemade chicken broth.
If you don't have half-and-half, you can substitute with whole milk or cream, adjusting the amount to your desired consistency.
Garnish with fresh parsley, a drizzle of cream, or a sprinkle of paprika for an elegant presentation.
