Return the chicken to the Instant Pot. Pour in the Cabernet Sauvignon, tomato paste, garlic powder, onion powder, chicken bouillon granules, Italian seasoning, and red pepper flakes. Stir to combine.

For a richer sauce, consider adding a splash of heavy cream after releasing the pressure.
Adjust the amount of red pepper flakes to suit your spice preference.
If you don't have Cabernet Sauvignon, a dry Merlot or Chianti will also work well.
Serve immediately over your favorite pasta, rice, or polenta. Garnish with fresh parsley or grated Parmesan cheese.
