Follow The Directions

01

Step

Preheat the oven to 350°F (175°C). Lightly grease a baking pan with cooking spray. (5 minutes)

02

Step

Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic and cook until softened and fragrant, about 3 minutes. Add the diced ham and chopped spinach; stir until the spinach wilts, about 1 minute. Use a spatula to chop the mixture slightly in the skillet. Remove from heat and stir in the softened cream cheese until melted and well combined. Mix in the shredded Swiss cheese and set the filling aside to cool slightly. (10 minutes)

03

Step

Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, pound the chicken breasts to an even 1/2-inch thickness. Place the flattened chicken breasts in a large bowl, pour Italian dressing over them, and toss to coat evenly. (10 minutes)

04

Step

Place one chicken breast on a cutting board. Spoon about 1/4 of the filling onto the center of the chicken breast. Fold the chicken over the filling to form a packet, and secure the edges with toothpicks. Repeat with the remaining chicken breasts and filling. (15 minutes)

05

Step

In a medium bowl, combine the finely crushed crackers and shredded Cheddar cheese. Press each stuffed chicken breast into the cracker mixture, ensuring it is fully coated. Place the coated chicken breasts on the prepared baking pan. (10 minutes)

06

Step

Bake in the preheated oven for 45 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Remove from the oven and let the chicken rest for 10 minutes before transferring it to a serving platter to allow the filling to set up. Remove the toothpicks before serving. (55 minutes)

For best results, use a good quality cream cheese and fresh spinach.
Feel free to experiment with different cheeses in the filling. Gruyere or mozzarella would be excellent substitutes for the Swiss cheese.
If you don't have Italian dressing on hand, you can marinate the chicken in a mixture of olive oil, lemon juice, garlic powder, and Italian herbs.
Serve with a side of roasted vegetables or a fresh salad for a complete and balanced meal.

I accidentally used flavored crackers, and it turned out great! I used a cheese cracker, and it added a lot to the flavor.

I think the temperature was a little hot for my oven. I'll reduce it by 25 degrees next time.

Next time, I'll try adding some sun-dried tomatoes to the filling for an extra burst of flavor.

I found it helpful to chill the chicken breasts after stuffing, before coating with the cracker mixture. They held together much better.
