Follow The Directions

01

Step

In a skillet, heat sesame oil over medium heat. Add doubanjiang, shallots, garlic, and ginger. Sauté until fragrant, about 30 seconds. Add ground pork and cook until browned, approximately 3 minutes.

02

Step

Incorporate soy sauce, tahini, sake, miso paste, and tianmianjiang into the pork mixture, ensuring even distribution. Pour in chicken stock and bring to a boil. Combine rice vinegar and rayu, then add to the soup along with spinach. Reduce heat and simmer gently for 10 minutes, allowing the flavors to meld.

03

Step

Separate noodles by placing them in a bowl of hot water, then drain. Add noodles to the simmering soup. Garnish generously with sliced green onions and Thai chile peppers for an extra burst of flavor and visual appeal.

For a vegetarian option, substitute the ground pork with crumbled tofu or mushrooms. Adjust the amount of rayu to control the level of spiciness.
If you can't find tianmianjiang, a touch of hoisin sauce can be used as a substitute.
Garnish with a soft-boiled egg for added richness.
