Preheat oven to 275°F (135°C). (5 minutes)

In an 8-inch square baking dish, combine the chopped onion, minced garlic, rosemary, thyme, parsley, and basil. Spread the mixture evenly across the bottom of the dish. (5 minutes)

Arrange the tomato halves, cut-side down, on top of the herb and onion mixture. Drizzle generously with olive oil. Sprinkle evenly with sugar, and season with sea salt and freshly ground black pepper. (5 minutes)

Roast in the preheated oven until the tomatoes are softened, slightly collapsed, and browning around the edges, approximately 2 1/2 hours. (150 minutes)

For a richer flavor, use a high-quality extra virgin olive oil.
Adjust the herbs according to your preference. Oregano or marjoram can also be used.
These slow-roasted tomatoes can be stored in an airtight container in the refrigerator for up to 5 days. Bring to room temperature before serving.
Serve with crusty bread, crackers, or as a topping for grilled chicken or fish.
