For an even richer sauce, stir in a tablespoon of heavy cream or mascarpone cheese at the end of cooking.
Serve over pasta, rice, polenta, or mashed potatoes to soak up all the delicious sauce.
If you don't have fresh thyme, 1/2 teaspoon of dried thyme can be substituted.
Pounding the chicken breasts ensures even cooking and tender results.
