Pour in the olive oil, apple cider vinegar, red wine vinegar, white balsamic vinegar, lemon juice, red pepper flakes, allspice, sumac, and pomegranate syrup. Use your hands to ensure the chicken is thoroughly coated with the marinade. (5 minutes)

Cover the bowl with plastic wrap, pressing it directly onto the surface of the chicken to eliminate air pockets. Refrigerate for a minimum of 4 hours, or preferably overnight, to allow the flavors to meld and deepen. (4 hours+)

Preheat an outdoor grill to medium-high heat. If using grill baskets, preheat them on the grill for about 10 minutes. (10 minutes)

Divide the marinated chicken evenly between the preheated grill baskets. Grill for 10-15 minutes per side, or until the chicken is cooked through and boasts a beautiful golden-brown color with enticing grill marks. (20-30 minutes)

For the best flavor, marinate the chicken overnight. This allows the spices and vinegars to fully penetrate the meat.
If you don't have grill baskets, you can use metal skewers. Soak wooden skewers in water for 30 minutes before grilling to prevent them from burning.
Serve the Shish Tawook hot off the grill with a side of fluffy rice pilaf, refreshing Fatoosh, or vibrant Tabbouleh salad.
