Place the pork medallions, sesame-seed side down, into the hot skillet. Cook until golden brown and cooked halfway, about 8 minutes. While cooking, press the remaining sesame seeds onto the tops of the medallions. (8 minutes)

Flip the medallions and continue to cook for another 4-6 minutes, or until cooked through. An instant-read thermometer should register 145°F (63°C). (6 minutes)

Increase the heat to high, add the sake sauce to the skillet, and cook for 2 minutes, or until the sauce bubbles and thickens slightly, coating the pork medallions. (2 minutes)

Serve the pork medallions immediately, drizzled with the luscious sake sauce. Garnish with extra sesame seeds and fresh minced green onion.

For an extra layer of flavor, marinate the pork medallions in the sake mixture for 30 minutes before cooking. This will tenderize the meat and infuse it with even more flavor.
Be careful not to overcrowd the pan when cooking the pork. If necessary, cook in batches to ensure even browning.
