Heat vegetable oil in a medium skillet over medium heat. Add mustard seeds and cook until they begin to crackle. Stir in asafoetida. (2 minutes)

Reduce heat to low. Add sliced onion, garlic, cumin seeds, and turmeric. Cook and stir until the onion is tender and translucent. (5 minutes)

Stir in chopped tomato and frozen sliced okra. Gradually mix in chili powder, amchoor (or 1 teaspoon lemon juice), and salt. (2 minutes)

Cook and stir for about 10 minutes, or until the okra is tender but still holds its shape. Adjust seasoning as needed. (10 minutes)

For a richer flavor, use ghee (clarified butter) instead of vegetable oil.
If you don't have amchoor, a squeeze of fresh lemon juice at the end brightens the dish.
Serve hot with Indian rotis, pita bread, or naan, and a side of plain yogurt or raita.
Feel free to add other vegetables like bell peppers or potatoes for a heartier meal.
