Thaw frozen turkey breast in the refrigerator for about 24 hours.

Bring water to a boil in a saucepan. Stir in kosher salt, brown sugar, and pepper until dissolved. Remove from heat and let cool completely (about 30 minutes). Remove turkey breast from its wrapper, leaving any netting intact if possible. Place turkey in a container large enough to hold it and completely cover with the cooled brine. Add more water if needed to ensure full submersion, stirring to combine brine and water. Brine the turkey in the refrigerator for 8 hours, or overnight.

Preheat an air fryer to 390 degrees F (200 degrees C) according to the manufacturer's instructions.

Remove turkey from the brine and discard the brine. Pat the turkey dry with paper towels. Rub the entire surface of the turkey with butter and season generously with seasoned salt and pepper.

Place the turkey breast in the preheated air fryer. Cook for 15 minutes, then turn, carefully remove the netting (if present), and season again with seasoned salt and pepper. Reduce the air fryer temperature to 360 degrees F (182 degrees C). Continue cooking for another 20 minutes, turning the turkey after 15 minutes. Increase the air fryer temperature back to 390 degrees F (200 degrees C), turn the turkey again, and cook until the internal temperature reaches 165 degrees F (74 degrees C) and the juices run clear when pierced with a fork, approximately 15 minutes more. Remove the turkey from the air fryer and let it rest for 5 minutes before carving and serving.

For extra crispy skin, brush the turkey with melted butter halfway through the cooking process.
If you don't have seasoned salt on hand, you can substitute with a mixture of salt, paprika, garlic powder, onion powder, and a pinch of cayenne pepper.
Ensure the turkey breast is fully thawed before brining for best results.
A meat thermometer is highly recommended to ensure the turkey is cooked to a safe internal temperature.
