Follow The Directions

01

Step

Prepare the Mango Sauce: Heat 1 tablespoon of vegetable oil in a large saucepan over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and translucent (about 5 minutes). Add the cubed mangoes, lemon juice, sugar, ginger, cinnamon, and mace. Bring the mixture to a gentle simmer, stirring constantly for 5 minutes. Reduce the heat to low, cover the saucepan, and let the sauce cook for an additional 5 minutes to allow the flavors to meld. (Total time: 15 minutes)

02

Step

Cook the Chicken: While the mango sauce simmers, season the chicken breasts generously with salt and pepper. In a large skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the seasoned chicken breasts and cook for approximately 8 minutes on each side, or until they are nicely browned and cooked through, with no pink remaining in the center. (Total time: 16 minutes)

03

Step

Assemble and Serve: Place one or two pieces of the cooked chicken onto each serving plate. Spoon a generous amount of the warm mango sauce over the chicken. Sprinkle the chopped pecans evenly over the sauce as a final touch. Serve immediately.

For the best flavor, use ripe but firm mangoes. If fresh mangoes are not available, you can use frozen mango chunks, thawed.
Adjust the amount of sugar and lemon juice in the mango sauce to suit your taste. Some mangoes are sweeter than others.
To add a touch of heat, consider adding a pinch of red pepper flakes to the mango sauce.
Serve with steamed white rice or quinoa to complement the flavors of the chicken and mango sauce.
Garnish with fresh parsley or cilantro for a pop of color and freshness.
