In a large saucepan, combine 3 cups of water and the brown lentils. Bring to a boil over high heat. Once boiling, reduce heat to medium-low and simmer uncovered for 10 minutes. (Time: 10 minutes)

While the lentils are simmering, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until translucent and softened. Set aside. (Time: 5 minutes)

After the lentils have simmered for 10 minutes, stir in the remaining 2 1/2 cups of water, the cooked onion, white rice, TVP, dried parsley flakes, chicken bouillon granules, curry powder, and ground cumin. Return the mixture to a boil over high heat. Once boiling, remove from heat, cover the saucepan tightly, and let stand undisturbed for 20 minutes. This allows the rice to fully absorb the liquid and become fluffy. (Time: 20 minutes)

Before serving, season the lentils and rice with ground black pepper to taste. Stir well to combine all the flavors. Serve hot and enjoy! (Time: 2 minutes)

For a richer flavor, consider using vegetable broth instead of water and chicken bouillon.
Feel free to adjust the spices to your liking. A pinch of red pepper flakes can add a pleasant warmth.
If you prefer a firmer texture for your rice, reduce the standing time to 15 minutes.
This dish is even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days.
