Gently whisk the chocolate and cream together until smooth and glossy, being sure to scrape the bottom of the bowl to incorporate all the melted chocolate. Stir in the vanilla extract until well blended. Cover the surface of the ganache with plastic wrap to prevent a skin from forming, and let it cool at room temperature or in the refrigerator until it reaches a spreadable consistency. (30 minutes)

For a richer flavor, use dark chocolate chips in the ganache.
If you don't have crème fraîche, you can substitute sour cream or plain Greek yogurt.
