Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray. (5 minutes)

Combine garbanzo beans and kidney beans in a food processor; pulse until smooth. Crumble tofu into the food processor; pulse until well combined and mixture resembles ground meat. (10 minutes)

Transfer mixture to a large bowl. Add tomato sauce, oats, bell pepper, vegan egg replacer, onion powder, garlic powder, oregano, and salt; mix by hand until thoroughly combined. (5 minutes)

Form the mixture into a loaf shape and place it in the prepared baking dish. (2 minutes)

Bake in the preheated oven until cooked through, about 1 hour 30 minutes.

For a richer flavor, sauté the diced bell pepper before adding it to the mixture.
A glaze of ketchup or extra tomato sauce adds a delightful finishing touch.
Let the "meatloaf" cool slightly before slicing for best results.
