For an extra burst of lemon flavor, add 1/2 teaspoon of lemon extract to the wet ingredients. If you don't have lemon-flavored yogurt, plain yogurt works well. Just add an extra tablespoon of lemon zest. Store leftover muffins in an airtight container at room temperature for up to 3 days.
