Pressure Cook: Place the cubed potatoes into the Instant Pot. Add the water and chicken bouillon cubes. Stir briefly. Close the lid, ensuring the pressure valve is set to the 'Sealing' position. Select the 'Pressure Cook' or 'Manual' function and set the timer for 10 minutes. (1 minute)

Build Pressure and Cook: Allow the Instant Pot to come to full pressure. This will take approximately 10-15 minutes. Once at pressure, the timer will begin counting down. (25 minutes)

Release Pressure: After the 10-minute cooking time, allow the pressure to release naturally for 10 minutes. Then, carefully release any remaining pressure using the quick-release method. (12 minutes)

Mash and Enrich: Carefully drain off most of the liquid from the pot, leaving a tablespoon or two for added moisture. Add the sour cream, cubed butter, and milk to the potatoes. Using a potato masher or an electric mixer, gently mash the potatoes until they reach your desired consistency. Be careful not to over-mash, as this can lead to gummy potatoes. (5 minutes)

For an even richer flavor, substitute half-and-half or heavy cream for the milk.
