Place the Boursin cheese in the center of a 9x13-inch baking dish. Scatter the halved grape tomatoes around the cheese. Drizzle with olive oil and sprinkle with crushed red pepper flakes. (2 minutes)

Bake in the preheated oven until the tomatoes are softened and beginning to burst, and the cheese is melted and bubbly, about 15 minutes. (15 minutes)

While the cheese and tomatoes are baking, cook the pasta according to package directions in a large pot of salted boiling water until al dente. Reserve about 1/2 cup of the pasta cooking water before draining. (8-12 minutes)

Add the cooked pasta, shredded chicken, and chopped spinach to the baking dish with the melted Boursin and tomatoes. Toss gently but thoroughly to combine, coating the pasta evenly with the sauce. (3 minutes)

If desired, stir in the lemon zest and juice for added flavor. Add reserved pasta water, a tablespoon at a time, until the sauce reaches your desired consistency. (2 minutes)

Serve immediately. Garnish with fresh basil or parsley, if desired.

For a vegetarian option, skip the chicken and add roasted vegetables like zucchini or bell peppers.
Try different varieties of Boursin cheese for a unique flavor twist. Garlic & Fine Herbs or Basil & Chive would both be delicious.
If you don't have fresh lemon on hand, a splash of white wine vinegar can add a similar brightness.
To make ahead, bake the Boursin and tomatoes, then cool slightly. Store in the fridge. Cook pasta and combine everything just before serving.
