Follow The Directions

01

Step

Gently place the eggs in a saucepan and cover them with cold water. Bring the water to a rolling boil, then immediately remove the pan from the heat. Cover and let the eggs stand in the hot water for 15 minutes. (15 minutes)

02

Step

Carefully remove the eggs from the hot water and place them in a bowl of ice water to cool completely. Once cooled, peel the eggs. (5 minutes)

03

Step

In a medium bowl, combine the mashed avocado, diced onion, diced tomato, chopped cilantro, lime juice, minced jalapeno, and minced garlic. Season generously with salt and freshly ground black pepper. Mix well to ensure all ingredients are evenly distributed. Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. (1 hour)

04

Step

While the avocado mixture chills, drain the pickled garlic cloves and minced pickled jalapeno on a plate lined with paper towels to remove excess moisture. (5 minutes)

05

Step

Once the eggs are peeled, slice each egg lengthwise. Carefully remove the yolks and set them aside for another culinary adventure (or discard). Use a damp paper towel to gently clean any remaining yolk residue from the egg white halves. Arrange the egg white halves, cut-side up, on a serving platter. (10 minutes)

06

Step

Spoon a generous amount of the chilled avocado mixture into each egg white half. (10 minutes)

07

Step

Top each deviled egg with a pickled garlic clove. Sprinkle minced pickled jalapeno, salt, and freshly ground black pepper over the deviled eggs to finish. Serve immediately or chill for later. (5 minutes)

For a smoother avocado mixture, you can use an immersion blender or food processor.
Adjust the amount of jalapeno to your spice preference. Remember that pickled jalapenos are often milder than fresh.
If you don't have pickled garlic cloves, you can substitute roasted garlic cloves or omit them altogether.
For an extra pop of color, garnish with a sprinkle of paprika or a few sprigs of fresh cilantro.
The deviled eggs are best served chilled. If making ahead of time, cover tightly with plastic wrap to prevent the avocado from browning.

I made these for a potluck and they were the first thing to disappear. I doubled the recipe and still didn't have enough!

I omitted the pickled jalapenos because I don't like spicy food and they were still so good!
