Preheat oven to 450 degrees F (230 degrees C). Prepare a baking sheet by lightly spraying with cooking spray or lining with parchment paper. (5 minutes)

On a lightly floured surface, roll the dough into a rectangle approximately 12x16 inches and 1/8-inch thick. (5 minutes)

Evenly spread 1 tablespoon of shortening over the entire surface of the dough using a spatula. Sprinkle generously with granulated sugar and then with ground cinnamon. (3 minutes)

Starting from one of the long edges, tightly roll the dough into a log. Using a sharp knife, slice the log into 3/4-inch thick rounds. (5 minutes)

Arrange the cookie slices on the prepared baking sheet, leaving a little space between each one. (2 minutes)

Bake in the preheated oven for 8-10 minutes, or until the cookies are lightly browned and the bottoms are sizzling. (8-10 minutes)

Transfer the cookies to paper towels to cool completely. Enjoy immediately, or freeze for a later treat.

For a richer flavor, use butter-flavored shortening.
