Follow The Directions

01

Step

Gather all ingredients and prepare your workspace.

02

Step

Bring a large pot of salted water to a rolling boil. Add the peeled potatoes and cook until tender, about 8-10 minutes. Drain well and refrigerate for at least 8 hours, or overnight, to allow the potatoes to firm up. This step is crucial for easy grating. (8 hours)

03

Step

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish with butter or cooking spray.

04

Step

Grate the chilled, cooked potatoes into a large bowl.

05

Step

In a small bowl, whisk together the melted butter, minced onion, parsley, salt, and pepper.

06

Step

In a separate small bowl, whisk together the sour cream and milk until smooth.

07

Step

Layer half of the grated potatoes into the bottom of the prepared casserole dish. Drizzle with half of the butter and onion mixture. Pour half of the sour cream mixture over the top, then sprinkle with 1/2 cup of the shredded cheddar cheese.

08

Step

Repeat with the remaining grated potatoes, butter mixture, sour cream mixture, and cheddar cheese.

09

Step

Bake in the preheated oven until the top is lightly browned and bubbly, about 1 hour. If the top browns too quickly, tent with foil during the last 15-20 minutes of baking. (1 hour)

10

Step

Let the casserole rest for 10 minutes before serving. This allows the sauce to thicken slightly and makes it easier to serve. Enjoy!

For a richer flavor, use a combination of cheeses such as Gruyere, Fontina, or Parmesan in addition to cheddar.
Fresh herbs will elevate the flavor of this dish. Consider using fresh thyme or chives in addition to or instead of parsley.
If you don't have time to refrigerate the potatoes overnight, you can place them in the freezer for about 1-2 hours to firm them up.
To make ahead, assemble the casserole and refrigerate it unbaked for up to 24 hours. Add about 15-20 minutes to the baking time if baking from cold.
