Remove the chicken and set aside to cool, reserving the flavorful cooking liquid in the pot. Once cooled, shred or chop the chicken into bite-sized pieces.

Return the cooking liquid to a boil. Add the spaghetti and cook until al dente, about 12 minutes. Drain the spaghetti well, but do not rinse. Discard the liquid.

In the same pot, melt the butter over medium heat. Add the chopped onion and bell pepper and sauté until softened, around 5-7 minutes.

Gradually incorporate the cream of chicken soup, cream of mushroom soup, diced tomatoes and green chiles, shredded chicken, and cooked spaghetti into the pot. Stir gently after each addition to ensure even distribution.

Add the Mexican cheese blend and stir until fully melted and the sauce is smooth and creamy. Season with salt and pepper to your liking. Continue cooking until everything is heated through and the cheese is completely melted, stirring occasionally to prevent scorching.

For an extra layer of flavor, consider adding a clove of minced garlic along with the onion and bell pepper.
If you prefer a richer sauce, use heavy cream or cream cheese in place of some of the condensed soup.
Adjust the amount of diced tomatoes and green chiles to control the level of spiciness.
Garnish with fresh parsley or cilantro for a pop of color and freshness.
