For a deeper flavor, use a high-quality red wine. Avoid wines labeled "cooking wine," as these often contain added salt. Adjust the amount of sugar to your preference. If you prefer a tart relish, reduce the sugar by 1/4 cup. The relish will thicken as it cools. If it becomes too thick, you can add a tablespoon or two of water or red wine to loosen it up. To sterilize jars and lids: Wash in hot, soapy water. Rinse well. Place jars on a baking sheet and heat in a 250°F (120°C) oven for 20 minutes. Place lids in simmering water for 10 minutes.
