Bake the casserole in the preheated oven for 40 minutes. Remove the aluminum foil. Sprinkle the remaining cheese evenly over the top of the casserole and continue baking until the cheese is melted and bubbly, about 5 to 10 minutes more. (50 minutes)

Let the casserole rest for 5 minutes before serving. This allows the cheese to set slightly and the flavors to meld together. (5 minutes)

For an extra layer of flavor, consider adding a can of drained and rinsed black beans or corn to the chicken mixture.
If you prefer a spicier casserole, use a hot taco seasoning mix or add a pinch of cayenne pepper to the chicken mixture.
Feel free to customize the cheese blend to your liking. Monterey Jack, Colby Jack, or a sharp Cheddar would all be delicious substitutes.
To prevent the tortillas from becoming soggy, you can lightly toast them in a dry skillet before adding them to the chicken mixture.
