In a stockpot, heat olive oil over medium-high heat. Add the chopped red onion and cook, stirring occasionally, until softened and translucent (approx. 5 minutes).

Add the diced potatoes and celery. Sauté until the celery is tender and slightly browned (approx. 3-5 minutes).

Pour in the water, add the chicken bouillon cube, garlic salt, and black pepper. Bring to a boil, then reduce heat and simmer until the potatoes are tender (approx. 20-25 minutes).

Carefully transfer the soup in batches to a blender, filling it no more than halfway. Secure the lid and pulse a few times before blending until smooth. Return the blended soup to the pot.

Serve hot, garnished with freshly grated Parmesan cheese, chiffonade of fresh basil, and parsley flakes.

For a creamier soup, add 1/2 cup of heavy cream or half-and-half after blending.
If you prefer a chunkier soup, blend only half of the soup and leave the rest as is.
Vegetable broth can be substituted for water and bouillon for a vegetarian option.
Adjust the amount of garlic and garlic salt to your personal preference.
A pinch of red pepper flakes can add a subtle kick.
