Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans. In a medium bowl, whisk together the self-rising flour, cocoa powder, salt, and baking soda. (5 minutes)

02

Step

In a large bowl, using an electric mixer, beat the vegetable shortening and white sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Beat in the blue food coloring, 1 teaspoon of blueberry extract, and apple cider vinegar until well combined. (7 minutes)

03

Step

Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix. (5 minutes)

04

Step

Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. (35 minutes)

05

Step

Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely. (10 minutes)

06

Step

While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter with an electric mixer until smooth and creamy. Gradually add the confectioners' sugar, beating until well combined. Beat in the remaining 1 teaspoon of blueberry extract. Whip until light and fluffy. (10 minutes)

07

Step

Once the cakes are completely cool, frost the top of one layer of cake, and stack the other layer on top of it. Then frost the top and sides of the cake with the remaining frosting. Sprinkle the chopped walnuts over the top of the cake. (10 minutes)

08

Step

Slice and serve. Enjoy your beautiful Blue Suede Cake!

For a more intense blueberry flavor, you can add fresh or frozen blueberries to the batter. Gently fold them in after the batter is mixed.
Ensure all ingredients are at room temperature for optimal mixing and a smoother batter.
Don't overbake the cake to keep it moist and tender.
If you don't have self-rising flour, you can make your own by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
