Heat vegetable oil in a Dutch oven or large, heavy-bottomed pot over medium heat. Add the onion, celery, and garlic and cook, stirring occasionally, until softened but not browned (about 5 minutes).

Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease (5-10 minutes).

Stir in the crushed tomatoes, tomato sauce, water, Worcestershire sauce, chili powder, garlic powder, oregano, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer, stirring occasionally, for at least 1 1/2 hours, or up to 3 hours for a richer flavor (90-180 minutes).

Stir in the kidney beans and simmer for an additional 10 minutes to heat through (10 minutes).

For a smokier flavor, add 1/2 teaspoon of smoked paprika along with the other spices.
Feel free to substitute ground turkey or chicken for the ground beef.
To make this chili spicier, add a pinch of cayenne pepper or a chopped jalapeño pepper.
Serve with your favorite toppings, such as shredded cheese, sour cream, chopped onions, or avocado.
