Follow The Directions

01

Step
5 mins

Preheat your oven to 450 degrees F (230 degrees C). Lightly coat a baking sheet with cooking spray. (5 minutes)

02

Step
10 mins

In a spacious bowl, gently combine the ground chicken, ground pork, panko bread crumbs, egg, 1 teaspoon of sriracha sauce, garlic powder, dried chives, salt, and black pepper. Mix with a light touch until just incorporated. Roll the mixture into approximately 20 bite-sized meatballs, placing them uniformly on the prepared baking sheet. (10 minutes)

03

Step
14 mins

Slide the baking sheet into the preheated oven and bake for 8 minutes. Then, carefully flip each meatball and continue baking until they are cooked through and no longer pink in the center, approximately 6 minutes more. (14 minutes)

04

Step
5 mins

While the meatballs are baking, prepare the luscious sauce. In a separate bowl, whisk together the mayonnaise, sweet chili sauce, 2 tablespoons of sriracha sauce, and rice vinegar until smooth and creamy. (5 minutes)

05

Step
2 mins

Once the meatballs are done, remove them from the oven and allow them to cool slightly for about 2 minutes. Gently toss the meatballs with the prepared sriracha sauce, ensuring each one is evenly coated. Arrange the glazed meatballs artfully on a serving platter and garnish with grated carrot and fresh cilantro. Finally, insert a decorative toothpick into each meatball for easy handling and presentation. (10 minutes)

For an extra layer of flavor, consider adding a pinch of ginger or a dash of sesame oil to the meatball mixture.
The sauce can be made ahead of time and stored in the refrigerator until ready to use. If you prefer a spicier kick, increase the amount of sriracha sauce to your liking.
These meatballs are also delicious served over rice or noodles for a complete meal.
