Follow The Directions

Cook the ziti according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process. Transfer to a large roasting pan. (15 minutes)

In a large bowl, whisk together 1 jar of spaghetti sauce and the ricotta cheese. Add this mixture to the cooked pasta and stir to combine. (5 minutes)

In a food processor, pulse the spinach and carrots separately until finely chopped. Set aside. (5 minutes)

Heat the olive oil in a large skillet over medium-high heat. Add the diced carrots and cook for about 2 minutes, until they begin to soften. Add the zucchini, portobello mushrooms, button mushrooms, and minced garlic. Cook, stirring occasionally, until the zucchini is tender, about 4 minutes. (10 minutes)

Remove the skillet from the heat and stir in the chopped spinach, drained diced tomatoes, and 2 tablespoons of Italian seasoning. Add this vegetable mixture to the pasta in the roasting pan and mix well. Sprinkle about half of the Italian cheese blend over the pasta and stir it through. (5 minutes)

Pour the 3 remaining jars of spaghetti sauce over the pasta and vegetables, stirring until everything is evenly coated. Season with the remaining 2 tablespoons of Italian seasoning, salt, and pepper to taste. Mix well and cover the pan tightly with aluminum foil. (5 minutes)

Bake in the preheated oven for 1 to 1.5 hours, or until the dish is heated through. Remove the foil and sprinkle the remaining Italian cheese blend over the top. (90 minutes)

Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly and begins to brown. (10 minutes)
