Follow The Directions

01

Step

Preheat the oven to 400 degrees F (200 degrees C).

02

Step

Sift 2 cups flour, white sugar, and salt into a large bowl; cut in butter until the mixture resembles coarse crumbs. Stir in egg yolks; the mixture will be crumbly. Set aside 1/4 of the crumb mixture; press the remaining 3/4 crumb mixture into the bottom and up the sides of an 8-inch tart pan or pie plate. (Prep time: 20 minutes)

03

Step

Combine apples, brown sugar, 1 tablespoon flour (taken from the 2 cups), cinnamon, and nutmeg in a bowl; spoon into the crust. Sprinkle the reserved crumb mixture evenly over the top. Place pie on a baking sheet. (Prep time: 10 minutes)

04

Step

Bake in the preheated oven for 15 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C); continue baking until the top is golden brown and the filling is bubbling, about 20 minutes more. (Baking time: 35 minutes)

For an extra layer of flavor, consider adding a tablespoon of lemon juice to the apple mixture.
Serve warm with a dollop of freshly whipped cream or a scoop of vanilla ice cream.
Ensure the butter is very cold when making the shortbread crust for the best, flakiest results.

Be careful not to overbake the crust, or it will be too dry.

I had some leftover streusel topping, so I used that instead of the reserved crumbs. Delicious!
