Follow The Directions

01

Step

In a large stock pot, brown the ground round over medium-high heat until cooked through. Drain off any excess grease, leaving approximately 2 tablespoons of rendered fat in the pot. (Approximately 8-10 minutes)

02

Step

Dissolve the beef bouillon cubes in 3 cups of hot water. Add this flavorful broth to the pot with the browned ground beef.

03

Step

Pour in the spicy vegetable juice cocktail, followed by the thawed mixed vegetables, alphabet pasta, and 6 cups of water. Stir well to combine all ingredients.

04

Step

Bring the soup to a simmer. Reduce heat to low, cover, and let simmer for 20 minutes, or until the alphabet pasta is tender and cooked through. (Approximately 20 minutes)

05

Step

Season the alphabet soup to taste with salt and pepper. Serve hot and enjoy!

For a richer flavor, consider browning the ground beef with a diced onion and a clove or two of minced garlic.
Feel free to adjust the amount of vegetable juice cocktail to your preferred level of spiciness.
If you don't have alphabet pasta, any small pasta shape will work well in this soup.
Garnish with fresh herbs like parsley or chives for a pop of color and flavor.

A great recipe for a chilly day. I used regular vegetable juice and it was still very good.

I found the soup a little too salty, so I reduced the amount of bouillon cubes. It was perfect after that!
