Follow The Directions

01

Step

Preheat your waffle iron according to the manufacturer's instructions. (5 minutes)

02

Step

In a large bowl, whisk together the milk, shredded zucchini, eggs, and melted butter until well combined. (2 minutes)

03

Step

In a separate bowl, whisk together the whole wheat flour, quick-cooking oats, brown sugar, baking powder, salt, and ground cinnamon. (2 minutes)

04

Step

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. (3 minutes)

05

Step

Ladle the batter onto the preheated waffle iron and cook until golden brown and crisp, about 5 minutes per batch. (5 minutes per batch)

For a richer flavor, try using browned butter instead of melted butter.
If you don't have whole wheat flour, you can use all-purpose flour instead.
To prevent the waffles from sticking, lightly grease the waffle iron with cooking spray before each batch.
These waffles are delicious served with fresh fruit, maple syrup, yogurt, or a dollop of whipped cream.
Leftover waffles can be stored in the freezer for up to 2 months. Reheat them in a toaster or oven for best results.
