Step

In a medium bowl, combine 1/3 cup of sugar and the lime gelatin mix. Add 1 cup of boiling water and stir for 2 minutes, or until completely dissolved. (2 minutes)

Add enough ice to 1/2 cup of cold water to measure 3/4 cup. Add this mixture to the lime gelatin and stir until the ice is completely melted. Refrigerate for 25 minutes. (25 minutes)

Meanwhile, repeat step 1 using the strawberry gelatin mix, but omit the refrigeration step. (2 minutes)

Pour the strawberry gelatin into 16 (3-oz.) paper cups. Freeze for 20 minutes. (20 minutes)

Stir 1/2 teaspoon of chocolate chips into the gelatin in each cup. (5 minutes)

In a medium bowl, beat together the cream cheese and remaining sugar with a mixer until well blended. (3 minutes)

Stir in the whipped topping and spread the mixture over the strawberry gelatin in the cups. (5 minutes)

Pour the refrigerated lime gelatin over the cream cheese mixture. (2 minutes)

Insert a wooden popsicle stick into the gelatin in the center of each cup. (2 minutes)

Freeze for 3 hours, or until firm. Remove the pops from the cups just before serving. (180 minutes)

For a cleaner look, you can use a melon baller to create small spheres of cream cheese mixture instead of spreading it.
If you don't have paper cups, you can use silicone popsicle molds for easy removal.
Experiment with other fruit-flavored gelatins to create different color variations.
