For an extra layer of flavor, try adding a pinch of cayenne pepper or a dash of your favorite hot sauce to the batter. If you don't have self-rising flour or cornmeal, you can make your own by adding 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt per cup of all-purpose flour or cornmeal. Make sure the oil temperature is consistent. If it's too low, the hush puppies will absorb too much oil; if it's too high, they'll burn on the outside before cooking through. Leftover hush puppies can be reheated in a 350°F (175°C) oven for a few minutes to restore their crispness.
