For an even richer flavor, consider using roasted garlic instead of fresh onion. Roast a head of garlic, then mince and add to the soup with the potatoes and celery. If you prefer a completely smooth soup, use an immersion blender to puree a portion of the soup before serving. Be careful not to over-blend, as this can make the soup gummy. Adjust the amount of chicken broth to reach your desired consistency. If the soup is too thick, add more broth. If it's too thin, simmer uncovered for a few minutes to reduce. To make this soup vegetarian, substitute vegetable broth for the chicken broth and use vegetarian bouillon cubes.
