Follow The Directions

01

Step

Gather all ingredients for a seamless cooking experience. (5 minutes)

02

Step

Heat olive oil in a medium saucepan or Dutch oven over medium heat. Add diced onion and sauté until softened and translucent. (5 minutes)

03

Step

Add minced garlic to the saucepan and sauté until fragrant, being careful not to burn. (1 minute)

04

Step

Stir in tomato paste and cook for 1 minute, allowing it to caramelize slightly and deepen the flavor.

05

Step

Pour in chicken bone broth, scraping up any browned bits from the bottom of the pan. Add Tuscan seasoning, chicken pieces, and sun-dried tomatoes. Bring to a simmer.

06

Step

Stir in the pasta and cook until tender but still slightly firm to the bite, according to package directions. (8-10 minutes)

07

Step

Stir in the chopped spinach until wilted. (1 minute)

08

Step

Remove from heat. Sprinkle in Parmesan cheese and stir until melted and well combined. Stir in heavy cream for a richer, creamier texture.

09

Step

Serve immediately, garnished with additional Parmesan cheese and a drizzle of olive oil, if desired.

For a vegetarian option, substitute the chicken bone broth with vegetable broth and omit the chicken.
If you prefer a thicker soup, you can blend a portion of the soup before adding the cream. Be careful when blending hot liquids.
Feel free to add other vegetables, such as chopped carrots, celery, or zucchini, to the soup for added nutrients and flavor.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
