In a Dutch oven or large heavy pot, melt butter over medium-high heat. Add chopped onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Remove from heat.

In the same pot, combine bread cubes, chopped oysters (including their liquor), chopped celery, salt, pepper, thyme, and poultry seasoning with the sautéed onions. Stir well to ensure all ingredients are evenly distributed.

Spoon the mixture into the prepared baking pan. Cover tightly with aluminum foil.

Bake in the preheated oven for 40 minutes. Remove the aluminum foil and continue baking until the top is lightly golden brown, approximately 20 minutes more. Let cool slightly before serving.

For a richer flavor, consider using brioche or challah bread for the cubes.
If you prefer a moister dressing, add a little chicken or vegetable broth to the oyster liquor until desired consistency is reached.
Don't overbake! The dressing should be moist and tender, not dry.
For a crispy top, broil for the last 2-3 minutes of baking, watching carefully to avoid burning.
