Follow The Directions

01

Step

Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with 1 tablespoon butter. (Prep time: 5 minutes)

02

Step

Heat oil in a large skillet over medium-high heat. Sauté onion and garlic in hot oil until onion begins to soften, 5 to 7 minutes. Add bacon, bell pepper, and jalapeños; cook and stir until bacon is browned, 7 to 10 minutes. (Cook time: 15 minutes)

03

Step

Stir beer, barbecue sauce, brown sugar, and molasses together in a large bowl. Stir in pinto beans, bacon-onion mixture, garlic salt, and pepper. Pour bean mixture into the prepared baking dish. (Prep time: 5 minutes)

04

Step

Bake in the preheated oven until bubbling and browned, about 45 minutes. (Bake time: 45 minutes)

For an even deeper smoky flavor, consider using smoked bacon.
If you prefer a milder flavor, remove the seeds and membranes from the jalapeño peppers before mincing.
Experiment with different types of beer to find your favorite flavor combination. A dark stout or porter can add a rich, malty note.
These beans can be made ahead of time and reheated, making them perfect for potlucks and parties.
To prevent the beans from drying out during baking, cover the dish with foil for the first 30 minutes and then remove the foil for the remaining 15 minutes to allow the top to brown.

I added a can of diced tomatoes and it gave the beans a nice acidity.

Next time I'll try using a different kind of bean, like kidney or great northern. I'm sure they would be great, too!
