Place the remaining 1 cup of flour in a separate bowl. Dredge each chicken piece in the flour, ensuring it's fully coated. Dip the floured chicken into the egg mixture, allowing any excess batter to drip off. (10 minutes)

Heat vegetable oil in a wok or a large, deep skillet over medium-high heat. The oil is ready when a drop of water sizzles immediately upon contact. (5 minutes)

Carefully lower the battered chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and cooked through, about 3-4 minutes, flipping as needed to ensure even cooking. Remove the cooked chicken and place on a wire rack to drain excess oil; keep warm. (10 minutes)

In a small bowl, whisk together cornstarch and 3 tablespoons of water until smooth. Set aside. (2 minutes)

In a medium saucepan, combine sugar, ketchup, vinegar, 1/2 cup water, orange marmalade, pineapple, pineapple juice, soy sauce, ginger, garlic, and red pepper flakes. Bring the mixture to a boil over medium heat. Once boiling, add the cornstarch mixture, stirring constantly. Reduce the heat to low and simmer, stirring frequently, until the sauce thickens to your desired consistency. (15 minutes)

Pour the luscious orange sauce over the crispy fried chicken, tossing to coat evenly. Serve immediately and enjoy! (2 minutes)

For extra crispy chicken, double-fry the chicken: Fry once as directed, remove from oil, and then fry again for 1-2 minutes before tossing in the sauce.
Adjust the amount of red pepper flakes to your liking for desired spice level.
Serve over rice or noodles for a complete and satisfying meal.
