Follow The Directions

01

Step

In a medium saucepan, combine water and rice. Bring to a boil over medium-high heat. (2 minutes)

02

Step

Reduce heat to low, cover, and simmer until the rice is tender and all the water has been absorbed. (20-25 minutes)

03

Step

While the rice is simmering, preheat the oven to 325 degrees F (165 degrees C). Grease an 8-inch square baking dish with butter or cooking spray.

04

Step

Once the rice is cooked, stir in the whole milk until well combined.

05

Step

In a separate bowl, whisk together the beaten eggs, sugar, vanilla pudding mix, melted butter, vanilla extract, and salt.

06

Step

Pour the egg mixture into the rice and milk mixture, stirring until everything is fully incorporated.

07

Step

Transfer the mixture to the prepared baking dish and spread evenly.

08

Step

Bake in the preheated oven until a knife inserted into the center of the pudding comes out clean, approximately 1 hour.

For an extra creamy texture, use full-fat milk and consider adding a splash of heavy cream at the end of cooking.
Feel free to experiment with different flavor extracts such as almond or lemon for a unique twist.
If you don't have vanilla pudding mix, you can substitute it with an equal amount of cornstarch mixed with a little extra sugar and vanilla extract.
Serve warm or chilled, depending on your preference. Garnish with a sprinkle of cinnamon or nutmeg for added warmth.
Store leftovers in the refrigerator for up to 3 days.
