For an even smoother hummus, peel the skins off the chickpeas before blending. Roasting the garlic beforehand will mellow its flavor and add a subtle sweetness. Add a tablespoon of tahini for a more traditional hummus flavor. A pinch of cayenne pepper will give it a kick.
