Blend or puree the hulled strawberries until smooth. A high-speed blender or food processor works best. (5 minutes)

In a medium saucepan, dissolve the cornstarch in the cold water, creating a slurry. Add the strawberry puree and sugar to the saucepan. (2 minutes)

Heat the mixture over medium heat, stirring constantly to prevent scorching. Continue stirring until the mixture begins to thicken and just starts to boil. Remove from heat immediately. (8-10 minutes)

Stir in the unsalted butter and lemon juice until the butter is completely melted and the glaze is smooth and glossy. (2 minutes)

Allow the glaze to cool slightly before serving. It will thicken further as it cools. (15-20 minutes)

For a richer flavor, use brown sugar instead of white sugar.
Adjust the amount of lemon juice to your taste. More lemon juice will add brightness to the flavor.
If you prefer a completely smooth glaze, strain the mixture through a fine-mesh sieve after cooking to remove any seeds.
This glaze can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before using.
Try adding a pinch of salt to enhance the sweetness of the strawberries.
