Tear off four sheets of aluminum foil, each approximately 1 1/2 to 2 feet long.

Place the foil packets on a baking sheet.

Bake in the preheated oven for 20 minutes. Then, carefully open the foil packets (be mindful of escaping steam) and continue baking for an additional 15 minutes, or until the chicken is lightly browned and cooked through. (35 minutes)

For an extra layer of flavor, consider adding a pinch of smoked paprika to the vegetable mixture.
Serve the individual foil packets directly for a rustic presentation, or plate the chicken and vegetables separately.
A side of warm pita bread is excellent for soaking up the delicious juices from the foil packets.
